Silk Potatoes
Published by admin under In The Begining on May 15, 2009For dinner I made one of those frozen Jenie-O turkeys, corn, and mashed potatoes. Only once the potatoes were finished boiling and were mashed did I realize we didn’t have any milk. We are a day shy of pay day, and we tend to just eat/drink whatever is left before we make a trip to the grocery store. We try to make only two shopping trips per pay period. One for groceries and the other for whatever else we need. Shopping with two children is like watching The Nightmare on Elm Street …..in the dark. I really didn’t want to mess with one of us running to the store for just a galleon so I was considering scrapping the potatoes altogether. Then it occurred to Matthew “We have Soy Milk that we give to Vera”. Vera can’t consume a lot of milk (it does horrible things to her) so we substitute the soy milk for her morning cup-o-milk. We used the Silk vs. Milk and low and behold we’re still here! It was actually pretty good. A little sweet, but good. Leave it to Matt-Man to save the day….or in our case dinner.
